Green foliage darkens as the plant matures and soon shoots up soft, fluffy panicles that represent a squirrel’s tail, turning dark red over time.

The panicles grow from the top of the stem and gradually bend over as they lengthen out. Harvest at any stage, but preferably before they bend over too much. Can be used fresh or dried.
